What to Eat This Week: 7-Day Dinner Plan
Not sure what to eat this week? Here’s a ready-made 7-day dinner plan with a mix of chicken, beef, fish, and meat-free meals, plus a shopping list, a prep-ahead schedule, and vegetarian swaps. If you’d rather build your own, the random dinner generator can fill your week in a few clicks.
The plan feeds about four people and is built so ingredients carry over from one night to the next. You buy less, waste less, and never have to ask “what’s for dinner?” at 6 p.m.
The 7-Day Dinner Plan
The busiest nights get the fastest meals. The weekend gets the slower, cozier cooking.
| Day | Dinner | Why it’s here | Time |
|---|---|---|---|
| Monday | Sheet-pan lemon herb chicken thighs with potatoes and green beans | Easy start to the week, one pan to wash | 45 min |
| Tuesday | Beef and broccoli stir-fry with rice | Fast and filling; cook extra rice for Thursday | 25 min |
| Wednesday | Black bean and corn quesadillas with a side salad | Midweek energy is low, so keep it simple and meat-free | 20 min |
| Thursday | Salmon rice bowls with cucumber and avocado | Uses Tuesday’s rice and adds fish to the week | 20 min |
| Friday | Homemade pizza night | A fun, hands-on end to the work week | 30 min |
| Saturday | Turkey chili with cornbread | More time to simmer; makes leftovers | 1 hr |
| Sunday | Minestrone with grilled cheese | Cozy, uses up vegetables, lunch leftovers for Monday | 45 min |
How the plan stays balanced
Across the week you get two poultry dinners, one beef, one fish, and three meat-free or easily meat-free meals. There’s one stir-fry, one bowl, one soup, one stew, and one pizza. No cuisine shows up twice in a row, so the week doesn’t feel repetitive.
What to eat for dinner this week if your schedule is different
Swap the days to match your life. If Tuesday is your late night, move the quesadillas there. If you have soccer practice on Thursdays, move pizza night. The only rule is to keep the rice night before the salmon bowls, since Thursday uses Tuesday’s leftover rice.

Prep-Ahead Plan
About an hour on Sunday afternoon makes the whole week faster. You don’t have to do all of it. Even two or three steps help.
Sunday (about 60 minutes)
- Chop the onions for Monday, Tuesday, Saturday, and Sunday. Store them in a sealed container in the fridge.
- Trim the green beans and cut the broccoli into florets.
- Make the lemon herb marinade for Monday’s chicken: lemon juice, olive oil, garlic, and Italian seasoning. Add the chicken and refrigerate.
- Mix the stir-fry sauce for Tuesday: soy sauce, oyster sauce, garlic, ginger, and a little cornstarch.
- Mix the chili spices for Saturday in a small jar.
- Wash the salad greens and dry them well.
During the week
- Monday night: slice the steak thinly for Tuesday. It’s easier to slice when it’s very cold.
- Tuesday night: cook a double batch of rice. Cool the extra quickly and refrigerate it for Thursday.
- Wednesday night: move the salmon to the fridge to thaw if it was frozen.
- Friday: take the pizza dough out an hour before cooking so it’s easier to stretch.
As a general food safety guideline, eat cooked leftovers within three to four days, and keep raw meat on the lowest shelf of the fridge.

Vegetarian Swaps
Three of the seven dinners are already meat-free or close to it. Here’s how to make the rest vegetarian.
- Monday: swap the chicken for a can of chickpeas and slices of halloumi or extra-firm tofu. Roast them with the same potatoes and green beans.
- Tuesday: use extra-firm tofu instead of beef. Press it, cube it, and fry until crisp before adding the sauce. Oyster sauce isn’t vegetarian, so use a vegetarian stir-fry sauce or extra soy sauce with a little sugar.
- Wednesday: already vegetarian.
- Thursday: replace the salmon with crispy tofu or shelled edamame. Keep the avocado, cucumber, and sriracha mayo.
- Friday: go with a margherita or a vegetable pizza.
- Saturday: skip the turkey and add one more can of beans, plus a diced sweet potato for body.
- Sunday: use vegetable broth in the minestrone.
For a fully vegan week, also swap the cheese for a plant-based version and use vegan mayo.
How to Plan What to Eat This Week Yourself
This plan is a starting point, not a rulebook. Once you’ve used it, you can build your own in about five minutes.
Build your own plan in one minute
- Open the random dinner generator.
- Set How many to 5 and Meal to Dinner.
- Add any filters you need, like vegetarian, a cuisine, or a time limit.
- Hit generate and keep the dishes you like.
- Generate again to replace the ones you don’t.
Five dinners is the sweet spot. Leave the other two nights for leftovers, takeout, or eating out. Life rarely goes exactly to plan, and an empty slot keeps food from going to waste.
Check your plan for balance
Before you shop, look at your five picks and ask:
- Is there at least one fish or meat-free meal?
- Is the same protein showing up more than twice?
- Are the quickest meals on the busiest nights?
- Can any ingredients do double duty, like rice, onions, or a bag of greens?
Make Wednesday the easy night
Wednesday is when weeknight cooking usually falls apart. You’re past the fresh start of Monday but not yet at the weekend. If you’re wondering what to eat on Wednesday, keep it to 20 or 30 minutes and use something already in the fridge. For more fast options, see our list of 50 easy dinner ideas for tonight.
Have a backup plan
Plans break. When they do, a stocked pantry saves the night. Pasta, eggs, canned beans, and frozen vegetables can turn into dinner in minutes. Our guide on what to eat when you have nothing at home has more ideas for those nights.
